Simple and Decadent

Ok, this is one of those Feel Good Eating dishes that just doesn't get an easier. You need no cooking skills for this, trust me. Just the ability to cut with a knife and to identify some real food in the supermarket. ;-)
Simple to make and the taste is decadent.
So next time you are at a loss for what to make try this with the following ingredients.; grass fed beef ribs, beets, garlic, celery, scallion, extra virgin olive oil, sea salt (optional,  fresh basil and parsley)

Heat up your grill and salt your beef ribs. Place on grill bone side down, forget about them for a while. Back into the kitchen, and pre-heat your oven to 400 degrees. Peel your beets and cut into cubes. Peel 3-4 cloves of garlic. Drizzle with evoo and some sea salt top with a few scallion.Mix together and put in the oven.
Next take your celery, wash and slice. Cut some scallions. In a bowl mix the celery and scallion, drizzle with evoo (sprinkle of salt) and some fresh basil. Go back to the grill and turn your ribs. A few more turns and they will be done. These short ribs take a  little longer, but they are well worth the wait. When beets are soft but not mushy, they are done. Enjoy.

So, I've been wondering, didn't you say before that you had a charcoal grill and then your neighbor gave you a gas grill? Because I've been wondering which one you mostly use and if you have a preference? Because I want to buy one for cooking outside in the summer to avoid heating up the house, and my dad always used charcoal with a cast iron grate and I think I like that better, but if there is some spectacular reason to buy gas then I'd like to consider that. Are they mostly just faster to get dinner ready using gas? I've tried reading reviews online (sheesh) but thought I'd just get the scoop from you, do you mind?

And that dinner looks really really good, I love beets; the tops are good too, do you ever eat those?

Yes, you are right ;-) I have a charcoal and now the gas grill that my neighbor recently gave me.
Preference...BIG TIME. Love my charcoal grill, gasgrill can't win that fight when it comes to flavor. For the charcoal I use wood charcoal and wood if i have it. Not those chemical briquettes thingies. The gas grill is great for speed. I just don't always have the time to start a good fire.
So the gas grill is great to have around. Does that help?

The tops are indeed very good. I like to saute them with some garlic, kind of like spinach.

Uh oh I've got some beef short ribs in the freezer from the farmers' market. You make everything look so easy and tasty!

Time to get grillin' again. It's the first day back up to around 60 degrees and lots of sunshine. It's been sort of rainy and overcast, and a little cold. Bought some wild shrimp that were already deveined and can't decide whether to boil them with some seasonings or throw them on the grill.

Had great sushi for lunch today at a new place I found near home. Maguro tuna and avocado with some spicy roe sauce over it. To die for. I had some chicken massamam curry and then the sushi. First time trying massaman... I love panange curry and almost always order that. My energy levels went through the roof. Must be the food and the sunshine blasting my brain cells into overdrive. Lots of good Thai places near work, but this is the first one near home.

Maybge boil the shrimp in a some stock and white wine withalittle garlic and lemon zest...YUM.

Love panang curry and love sushi. Glad you're eeating yummy stuff.
