Use those left overs

Here's dinner.

Simple broccoli and cauliflower mash and some sauteed chicken. I pre-cooked the chicken in some water for about 15 minutes. (not boiling) This keeps it nice and moist and then you can saute it quickly for good flavor with out drying it out. Unless of course you like dried out chicken. ;-)


Well, had chicken left over, so for a quick lunch;

Tomato basil soup from the healthfood store with the rest of the chicken tossed in.

how do you make mashed caulifower do you steam it then mash it with a fork or do you boil it?

You could steam it or boil. I made some today but a bit more dressed up! Roasted cauliflower in a covered pyrex with a bit of water in a hot oven for 45 min. Then I added it to the food processor with some coconut oil sauteed onion/garlic and some fresh parsley and a pinch of salt. You can also add some tehina for body, some mustard (dry or wet), diff herbs etc, milk (reg or coconut)!!

I am eating it now as we speak!!
