Eggs, Paprika and Salsa

Question, Do you buy salsa or make your own?
You know I made some tacos yesterday. I also made some salsa.
This is so easy and I'm sure a lot of you make it yourself, but just in case you need some inspiration, here it is.

6 -8 plum tomatoes, 1/4 of a large red onion, 1 small red pepper, 1/4 de-seeded jalapeno, 2 teasps of lime or lemon juice and 1 cup fresh chopped cilantro . Toss in the food processor. This is a basic variation. Go crazy add whatever you like and see what you come up with.

Yesterday for breakfast, I made a 4 egg omelet. Some scallion and tomato inside of it.
Try a little PAPRIKA as a spice when you make eggs, it's flavor combines well with eggs and butter. Omelet, some celery and blueberries.

Tip for your salsa. Sometimes the onion flavor can be "bigger" than the other, more tender flavors. If you run the chopped onions under warm / hot water, they will still have great flavor, without being overbearing.
